Vanuatu and Fiji
Vanuatu and Fijian kava come from the same plant but different islands, soils and cultivars, and drinkers tend to have a firm preference between them. Vanuatu kava is generally described as fuller and heavier in the cup; Fijian kava as cleaner and more peppery.
If you've only ever had one, this is an easy way to try the other.
How to prepare
- Add 2–3 tablespoons to a strainer cloth and gather it into a bundle.
- Fill a bowl with 600–800ml of cool water.
- Knead the cloth in the water for 3–4 minutes, until the water turns dark.
- Wring out the cloth, then serve in a bilo, around 100ml at a time.
Start with a smaller amount on your first bowl until you know how you find it.
Storage
Keep sealed in a cool, dry place out of direct sunlight.
